How to make mead (3 gallons):
1. Sterilize Everything! Use 1/2 fluid oz (15 ml) per gallon max
2. Mix 1.5 gallons of water and 6-11 lbs of honey (depending on desired sweetness) in carboy
3. In a mixing bowl:
a. Add 6 cups water
b. Add 1.2 tbsp yeast nutrient
c. Stir gently to homogenize
d. Add to carboy
4. Put stopper on carboy. Shake gently to homogenize
5a. Heat 6 cups water on stove to 104-109F (about 1.5 on our burner)
5b. Clean mixing bowl while water heats
6. In the mixing bowl:
a. Add water and 1 package of yeast (do not stir)
b. Wait 15 minutes
c. Stir gently to homogenize
d. Add to carboy
7. Shaking:
a. Put stopper on carboy
b. Shake carboy
c. Remove stopper
d. Repeat for 5 minutes
8. Fill airlock 1/2 full of water. Seal carboy
9. Wait 2-3 weeks (until there is less than one bubble every 5 seconds)
10. Rack mead (siphon it into another carboy and leave sediment in original carboy)
11. Wait 4-8 weeks (until bubbling stops)
12. Bottle mead
